Mediterranean diet

The Mediterranean Diet is a way of eating, based on the traditional foods (and drinks) of the countries surrounding the Mediterranean Sea.

The Mediterranean Diet is not a diet, as in “go on a diet,” even though it is a great way to lose weight or improve your health. Rather, it is a lifestyle – including foods, activities, meals with friends and family, and wine in moderation with meals.

The term “Mediterranean diet” was invented by physiologist Ansel Keys, from the School of Public Health of the University of Minnesota, who describes the model diet, which is followed by the peoples living at the basin of the Mediterranean sea especially in Crete.

In 1993 , the Harvard School of Public Health and the World Health Organization decided that the Mediterranean diet will be considered as the healthiest diet from all over the world.

In 1995 a team of scientists at Harvard University created the "Mediterranean Diet Pyramid"

The Mediterranean diet is often cited as beneficial for being: - low in ”bad” fat and high in ”good” fat, - and high in dietary fiber. One of the main explanations is thought to be, the health effects of olive oil.

It is famous for its beneficial properties and protects against heart attacks and various cancers, is low in calories, tones the body, helps proper bowel function, etc.

Number of studies has shown that people of Mediterranean area live longer and suffer less from heart diseases and cancer, than Americans and northern Europeans.

But in recent days clinical researches in Greece show that : - the less physically active lifestyle - a diet influenced by the Western pattern diet, - and the environmental pollution significantly increases risk of heart diseases and cancer even in young people. Skourkea Despoina

First of all we need some eggplants ( or courgettes )

We have to remove their inside.

We pour some oil on them.

Then we put them in the oven.

After that, we put some oil in a pot.

…mince an onion…

Throw it in the pot…

Throw the minced meet…

…and some wine…

…grate a tomato…

…and put it in the pot, too.

We mince parsley…

…and also throw it in the pot…

Firstly, heat some milk…

…and while we let the milk heat up… …pour some oil in a new pot.

…add flour…

…and then the milk.

After blending, an almost thick mixture will be created.

Then we can add some cheese for a more salty taste.

It’s time to get the eggplants and the courgettes out of the oven.

They have to be filled with the minced meat and onions.

Pour your sauce on the minced meat…

And put the pan in the oven again.

When it's ready we can serve it while still warm! =)
