Use cooling racks to stop the baking process. Rinse the cooling rack after first batch comes out, so you don’t have to wait for it to cool. Dry the cooling rack so it doesn’t burn you or counter. Butter based cookies will melt as soon as they touch a hot surface resulting in flat cookies. When cookies have cooled eat and enjoy!! Cool down and enjoy
