Ingredients You will need: 250g/9oz self raising flour 125g/4.5oz butter 100g/3.5oz superfine/caster sugar Handful of seedless raisins 1 medium sized egg 1 teaspoon of olive oil 0.5 teaspoon of baking powder Pinch of salt Pinch of mixed spice (all spice) A very small amount (up to one eighth teaspoon of milk.)

1. Wash your hands

2. Put the flour, baking powder, mixed spice and salt in a large bowl

3.Use a fork to mix all of the ingredients together.

4.Add the butter to the mixture and use your finger rub the mixture until it is crumbly

5.Break the egg into the bowl and whisk lightly

6.Add the egg, sugar and raisins to the mixture and mix together with a wooden spoon.

7.Add a very small amount of milk and mix it into a ball.

8. Sprinkle a little of flour and a flat surface and roll the mixture to one cm thick

9.Cut 5cm rounds from the dough

10.Add oil to the frying pan and heat on a low flame

11.Add some cake to the pan and cook for 3 mins. Flip cakes over and cook for a further 3 mins. Each cakes should be golden brown.

12.Arrange welsh cakes on a plate and sprinkle with sugar

13.Welsh cakes can be eaten hot or cold. Yum yum
